Tapas. Small Plates, Big Ideas.

We tried something new and different from our standard lunch buffets. Often we put food buffets traditionally with a green salad(s) or specialty salad(s), followed with one, two or three entree choices, sides and dessert. This type of service is always a winner and it works because of the variety and flexibility for guests to create their own lunch based on a limited number of choices. We will always stay true to this formula. Since we are a fixed and established food service, our customer/clients repeat events and food services often over time.

To change things up and keep food services fresh we try different approaches, whether we do action stations or in this case a tapas type of service. Tapas are a different way to eat. In Spain, traditional tapas are a way to satiate one’s appetite with many small plates of food, each different from the last and small enough to try a variety of dishes. You can imagine that this could be addictive, exploring the great culinary landscape of Spain. Here food and beverage is central to their culture. It’s tied into family and religion. Spain’s spectacular food scene can only be imitated here in the States. Many foods that are indigenous to their region are unique. Nevertheless, we can still take their approach to food and work the concept to our intent and purposeful desire to show another facet of what our food services can offer.

So here is our attempt at something different and unique, when the client came to our catering specialist and asked for a change. Receptive to this opportunity, we dove in head first and came up with our version of Tapas. Here the client did not have table seating nor a large room set aside for their event. With the tapas idea, a guest could pick up an interesting dish walk around with it and quickly finish the small sampling all the while networking with co-workers and friends at the high-boys. Take a breather, and come back for something else.

This was our solution to the no seating, no table and limited space challenge. As you can see from our overview picture shoot, the buffet table spread was simple and elegant. One felt special just walking around in this space with this type of format. Something different to consider the next time you plan your food event. And we don’t necessarily have to stay in a Spanish theme. The idea of small portions can be applied to any ethnic cuisine adventure. Let us create something special just for you!
