Everything In An Egg Roll

OK. I’ve gone egg roll crazy. I just decided to rattle off a wide variety of fillings for egg rolls. Both Savory and sweet. Meat Filled. Veg filled.

Many of the following combinations are still airy ideas. Some I have already played around with in the kitchen. A good amount of work still needs to be done to work out the flavor profiles. With some down time I started with dessert filled egg rolls. I’m pretty confident the savory versions of egg rolls will work out OK. I don’t feel that way about the desserts. So, trying to understand what I have with the dessert profiles and make adjustments with each is my current task. The list following this brief blog writeup will possibly change if I find it lacking. Not every idea works out as planned and that’s OK.

Second Entry: OK working on the dessert filled egg rolls. Apple egg rolls up first. I made 3-4 variations on the apple. Apple Pie made with Sugared Walnuts, Cream Cheese and Graham Cracker with Cinnamon Sugar Dusting. Apple without the nuts, Cream Cheese, Graham Crackers and Powdered Sugar Dusting. And finally Apple Pie with Caramel, Rum and Struesel Bits. All out of the gate, once fried and cooled a bit were too sweet and cloying. Overbearing I think because I used pie filling from the can to speed up the preparation. Re-evaluated and back to the drawing board, I am thinking of peeling fresh granny smith apples and dicing into small pieces. Here I will saute off with brown sugar and a bit of cinnamon, a touch of fresh squeezed lemon juice and kosher salt. I’m after more apples and less gel. I think the sugar and egg white roasted walnuts work great for added crunch as well as the struessel topping. Cream cheese added too much confusion. Too many flavors competing for attention on the palate, so we will forego the cream cheese. Worked it again in the fryer, let it cool slightly and sprinkled outside with cinnamon sugar and another with powdered sugar. My preference was the powdered sugar dusting. However both the cinnamon sugar and powdered sugar work out well. So, future suggestions to our patrons for an apple variety is as follows. Granny Apple Egg Roll with Candied Walnuts, Cinnamon and Sugar. Add a small bowl of plain fresh whipped cream with a hint of vanilla and sugar as a dipping sauce and we finally have something worthy of making it through the gauntlet.
